Valentine’s Day is just around the corner, are you at a loss of what to do, or perhaps do you want to try something a little different; why not have a picnic. I mean really when was the last time you had picnic, they are so easy and super romantic. This year since Valentine’s Day falls on a Saturday you really get to think outside the typical dinner date box. Being in Sunny San Diego makes this a lot easier for me, but if you are in one of those more frigid areas, how about a fort picnic (tap into those childish roots and build a couch fort/teepee, light the fire and/or candles and let the romance flow. I will post a follow up on this tomorrow.)
So let’s talk menu, I’m going to keep this super easy; Charcuterie & Cheese with my “Falling for You” Salad with a Balsamic Reduction Dressing.
Charcuterie & Cheese
For the Charcuterie & Cheese; I suggest pairing prosciutto, capicola and salami with a rich Triple Cream Brie. The meats are all dried cured and slightly salty so they pair well with a creamy cheese. Serve with a few crackers and enjoy.
“Falling for You” Salad with a Balsamic Reduction Dressing
Up next the “Falling for You” Salad with a Balsamic Reduction Dressing you only need a few simple ingredients, this one is a show stopper and seriously so easy. Head to the store and grab Pre-Washed Spring Mix, Goat Cheese, Candied Walnuts, Pomegranate Seeds, Beets, and Balsamic Vinegar, note this is a semi-homemade recipe. To make this super simple I like to buy the Candied Walnuts, Beets and Pomegranate Seeds pre-made and fruited at Trader Joe’s, this will save you like 30 minutes.
Balsamic Reduction Dressing
Ingredients – 2 cups of balsamic vinegar
Instructions – Place the balsamic vinegar in a small saucepan and cook over medium low heat until the vinegar has reduced by at least half (about 30 minutes for 2 cups of vinegar to reduce to 1 cup). As soon as the balsamic reduction reduces by half, remove it from the heat, and let it cool down.
Place the Spring Mix in a nice bowl, crumble Goat Cheese, Walnuts, Beets and Pomegranate Seeds on top, dress with a drizzle of the Balsamic Reduction, serve.
I recommend pairing with Buena Vista Pinot Noir Rose, it’s a light wine perfect for a day picnic. Tasting Notes: Alluring aromatics of citrus and strawberry lead softly to light berry flavors and a crisp, bright finish.
